Mike Robinson is a Michelin-starred restaurateur, respected wild game chef, passionate hunter, and acclaimed television presenter. With a career rooted in the British countryside, Mike first gained recognition as a presenter on popular UK cooking and countryside shows such as Countrywise and Taste of the Country. Today, he brings his expertise in sustainable cooking and fieldcraft to international audiences through four hit shows on the Outdoor Channel, including Farming the Wild, Fishing the Wild, and his signature Wild Game & Fish Masterclasses.
As a culinary entrepreneur, Mike operates three standout restaurants in England, including The Harwood Arms in London - which he part owns with 3 star Michelin Chef, Brett Graham — renowned as the city’s only Michelin-starred pub. His approach to food is grounded in ethical sourcing, seasonal produce, and a deep respect for wild game and regenerative farming.
Now based between Texas and the UK, Mike works as a consultant advising on a range of hospitality ventures and culinary projects across both continents. With new ventures constantly in development, Mike continues to redefine the intersection of fine dining, wild food, and sustainable living surounded by a collective of chefs and sommeliers.
Mike will be opening his first US Restaurant Axis, with Head Chef Jon Coates, in Fredericksburg, Texas in the Autumn of 2026.
Mike has also set up a game processing and butchering facility in Fredericksburg where he will be holding courses of full game butchery and also Hill House Events, where you can have private dinners and Events, in the Texas Hill Country at Mike’s own home just outside Fredericksburg.
