Welcome to Hill House—our home and headquarters in the heart of the Texas Hill Country, just outside Fredericksburg.

Set among beautiful countryside with extraordinary 40-mile views, Hill House is where Mike Robinson, Jon Coates and their guests come together to celebrate wild food, open-fire cooking and true field-to-fork hospitality.

Throughout the year, we host an exclusive collection of intimate dining events, hunting and butchery courses, private group experiences and corporate retreats.

These are deliberately small, personal events. Guests cook alongside our chefs, learn skills honed over decades and enjoy exceptional wild food in the relaxed surroundings of our home.

Wild-Game Dinners at Hill House

An intimate and interactive Hill Country dining experience

Ahead of the opening of AXIS, our forthcoming restaurant in Fredericksburg, we will be hosting two very special dinners each month in the beautiful Long Room at Hill House.

Each dinner is limited to just 20 guests and features five courses accompanied by wines from one of our favourite vineyards. Many evenings are created in collaboration with the featured winery, giving guests the opportunity to discover exceptional wines alongside a seasonal wild-game menu.

Dinner is prepared by AXIS Head Chef Jon Coates and hosted by restaurateur and Chef, Mike Robinson.

These are not conventional restaurant dinners. Guests are invited to arrive a little early, step into the kitchen and become part of the experience. Join in with the final preparations, discover new culinary techniques or simply enjoy a glass of chilled rosé while taking in the 40-mile views from the terrace.

Much of the cooking takes place in our open-fire Gaggenau kitchen, where guests can watch each course come together over flame and charcoal.

Dinner is served at one long communal table, creating a relaxed and convivial evening shared with fellow lovers of food and wine.

Mike owns a Michelin-starred restaurant in London—and during an evening at Hill House, you will understand why.

Charcoal-grilled wild boar chop saltimbocca with braised fennel and peaches, boulangère potatoes, and apple and pork sauce

Fredericksburg peach soufflé with peach and bourbon ice cream

$450 per guest, including wine with each course.

Important Information

Because we work with a very small kitchen team and create menus centred around wild game, these dinners are not suitable for vegetarian or vegan guests.

Wild-Game Butchery and Cookery at Hill House

Spend the day learning directly from Mike Robinson and Jon Coates

Mike and Jon are internationally known for their knowledge of wild-game harvesting, butchery, preparation and cookery.

This hands-on day at Hill House offers a rare opportunity to work alongside them, develop your practical skills and discover how to transform wild ingredients into an exceptional five-course dinner.

The day focuses on wild Axis deer and wild boar. Guests will learn how to skin, butcher and prepare the carcasses before moving into the kitchen to create dishes for the evening feast.

For fans of Farming the Wild, this is a unique chance to spend the day working directly with Mike and Jon in a relaxed, highly personal setting.

The Day

8:30am — Arrival and introduction. Morning — Skinning, carcass preparation and butchery Afternoon — Wild-game preparation and cooking 5:30pm — Five-course dinner at Hill House

Hunt, Prepare and Cook with Mike

A complete Texas field-to-fork experience

This is a rare opportunity to learn the deerstalking, shooting and fieldcraft skills that Mike Robinson has developed over many years in the field.

Offered only five times each year during the winter months, this private experience is available for groups of up to four guests.

The day begins with a morning of stalking on Mike’s 2,500-acre low-fence hunting lease, located close to Hill House in the Texas Hill Country. The deer are fully wild, making this an authentic and challenging hunting experience.

What You Will Learn

During the morning, guests will learn how to:

  • Stalk fully wild Whitetail deer

  • Shoot accurately and confidently from sticks

  • Improve practical field-shooting skills

  • Select an appropriate management deer

  • Properly field dress, bleed and transport the animal

The experience includes the opportunity to take one non-trophy Whitetail management deer, male or female, per hunting guest. Hill House rifles will be provided.

After the hunt, we return to Hill House for one-to-one instruction in skinning and butchery. You will prepare your deer under Mike’s guidance, and the finished meat will be packaged and frozen for you.

The day then moves into the Hill House kitchen, where we will prepare wild venison and wild boar for an early celebratory feast.

Partners are welcome to join us for dinner at approximately 5pm by prior arrangement.

Price - $10,000 for a private group of up to four hunting guests.

Optional Trophy Animals

Occasionally, a mature antlered Axis deer or Whitetail may be encountered. If a guest wishes to take one of these animals, this must be agreed with the guide and will incur an additional fee.

  • Mid-sized male Axis deer: $4,000

  • Large trophy Axis deer: $7,000

  • Eight-point Whitetail deer: $2,500

Availability cannot be guaranteed, and all decisions in the field remain at the discretion of the guide.

Requirements

A valid Texas hunting licence and all legally required hunting credentials are essential. Guests must provide their licence details before attending.

This experience is suitable for both newer and more experienced hunters. Safety, ethical harvesting and respect for the animal are central to the day.
