Welcome to Hill House – our headquarters and home in the Texas Hill Country, just outside Fredericksburg. Here we offer bespoke experiences with Mike Robinson and Jon Coates.

We are hosting 2 very small dinners per month in our stunning Long Room. 20 guests only, 5 courses with wine from our favourite vineyards.
Each dinner will collaborate with one of these amazing vineyards. These dinners will feature our favourite wild game as ingredients. Cooked by Chef Jon Coates, and Hosted by Restaurateur and Chef Mike Robinson.
Guests can be fully involved in the cookery process as we cook in our stunning wild fire kitchen and dining room. Enjoy peace and 40 mile views from the terrace and sip stunning wine between courses.
Mike owns a Michelin starred restaurant in London and you will see why!
The Menu
Menus change due to seasons and availability. Dinners not suited to vegetarian or vegan diners, due to our small kitchen and tiny crew! Dinner is served on a long communal table.
Snacks
Wild venison lollipops with Oxford sauce
Beef tartare on Pomme Anna potatoes with caviar
Whipped smoked cods roe with home made chips
Wild Gulf Snapper crudo with pickled radish and cucumber, ponzu dressing
Entrée
Hill Country Axis deer Ragu, home made tagliatelle, aged parmesan, truffle
Warm shallot and balsamic Tarte Tatin, aged balsamic caramel
Wild boar chops saltimbocca, grilled over charcoal, braised fennel and peaches, boulangere potatoes, apple and pork sauce.
Dressert
Fredericksburg peach soufflé, peach and bourbon ice cream
